02 — Origin Story
Morina Truffles was born from a single obsession: a truffle should arrive as alive as the moment it left the earth. Not as a warehouse relic. Not as an afterthought wrapped in damp paper.
Our founders spent three seasons walking the forests of Umbria, Istria, and the Périgord — building relationships with the hunters who wake before the sun to work alongside their Lagotto Romagnolo dogs. Trust, built one harvest at a time.
Today, 47 hunters across six countries dig to our specification: aroma first, firmness second, appearance last. Anything that would not stop a chef mid-sentence does not ship.

Hunted at dawn.

Aroma first. Firmness second. Beauty never outranks freshness. We still pay the hunter when we reject the truffle — so they stay honest.
Hunters on retainer, boxes at +2°C, couriers booked before the market opens. The box never sees ambient air above 4°C.
If the box opens quiet, we refund it and send the next dig. This has happened 0.03% of the time in 2025.

“I have been reading the earth here for twenty-three years. A good truffle tells you it is ready — the soil cracks, the flies hover. You just have to know how to listen.”
Marco · Umbria · 23 years hunting
03 — How it works

47 hunters across 6 countries dig between 04:00 and 08:00 — when the aroma is at its strongest and the soil temperature is still cool.

Aroma → firmness → form. Anything off is rejected. We still pay the hunter for the reject, so they stay honest.

Parchment, light vacuum, food-grade gel, EPP foam. The box never sees ambient air above 4°C from our facility to your door.

Named courier, signature required. SMS with prep notes 30 minutes before arrival. Under 36 hours, or it's free.
If your truffle arrives more than 36 hours after it was dug — for any reason — we refund the order in full and re-ship from the next morning's harvest. No forms, no return shipping, no questions.
04 — Reviews
“The only place in Europe where I can order on Tuesday and get something a French farmer would still call fresh on Wednesday. Irreplaceable.”
Daniel B.
Chef, Milan
“Showed up colder than my own fridge, with a handwritten temperature card. The aroma filled the kitchen the second I cut the tape.”
Mei L.
Home cook, London
“I have been buying from them for five years. Two delays in five years. Both times they refunded before I even noticed.”
Antoine R.
Restaurant owner, Paris
“I served the Périgord Black to a table of four Michelin inspectors. The room went quiet when the dish arrived. That is what a real truffle does.”
Sofia K.
Pastry chef, Vienna
“My grandfather was a truffle hunter in Umbria. He would have approved of this — good earth smell, firm, no tricks.”
Luca M.
Home cook, Rome
“I have written about truffles for twelve years. Morina is the only mail-order source I recommend without hesitation, every single time.”
Claire D.
Food writer, Brussels
